Veg Pulao

  • 12 cups basmati rice
  • 22 cups mixed vegetables (carrots, peas, beans)
  • 32 tbsp ghee
  • 41 tsp cumin seeds
  • 52 bay leaves
  • 64 green cardamom
  • 71 inch cinnamon stick
  • 81 onion, sliced
  • 91 tsp ginger-garlic paste
  • 101/2 tsp turmeric powder
  • 111 tsp garam masala
  • 12Salt to taste
  • 13Fresh mint leaves
Instructions

    Soak rice for 30 minutes. Drain.

    Heat ghee, add whole spices and cumin seeds.

    Add onions and cook until golden.

    Add ginger-garlic paste and vegetables. Cook for 5 minutes.

    Add rice, turmeric, garam masala, and salt.

    Add 4 cups water, bring to boil, then simmer covered for 20 minutes.

    Garnish with mint and serve with raita.
