Rajma Masala

  • 12 cups rajma (kidney beans), soaked overnight
  • 22 tbsp oil
  • 32 bay leaves
  • 41 inch cinnamon stick
  • 52 onions, chopped
  • 64 tomatoes, pureed
  • 72 tbsp ginger-garlic paste
  • 82 tsp red chili powder
  • 91 tsp turmeric powder
  • 102 tsp coriander powder
  • 111 tsp cumin powder
  • 121 tsp garam masala
  • 13Salt to taste
  • 14Fresh coriander
  • 152 tbsp cream
Instructions

    Pressure cook soaked rajma with salt until soft and mushy.

    Heat oil in a pan. Add bay leaves and cinnamon.

    Add onions and cook until golden brown.

  4. 4

    Add ginger-garlic paste and cook for 2 minutes.

  5. 5

    Add tomato puree and cook until oil separates.

  6. 6

    Add all spices and cook for 3-4 minutes.

  7. 7

    Add cooked rajma with its water. Simmer for 15 minutes.

  8. 8

    Mash some beans to thicken the gravy.

  9. 9

    Add cream and garnish with coriander. Serve with rice.
