Crispy South Indian crepe made from fermented rice and lentil batter, filled with spiced potato mixture.

Ingredients
- 12 cups dosa batter (rice and urad dal)
- 23 potatoes, boiled and cubed
- 31 onion, sliced
- 42 green chilies, slit
- 51 tsp mustard seeds
- 61 tsp urad dal
- 710-12 curry leaves
- 81/2 tsp turmeric powder
- 91 tsp ginger, minced
- 10Salt to taste
- 113 tbsp oil
- 12Fresh coriander
Instructions

For filling: Heat oil, add mustard seeds, urad dal, curry leaves.

Add onions, green chilies, ginger. Sauté until onions are golden.

Add turmeric, potatoes, salt. Mix well and cook for 5 minutes.

Heat tawa/griddle. Pour dosa batter and spread into thin circle.

Drizzle oil around edges. Cook until bottom is golden.

Place potato filling on one side of dosa.

Fold dosa and serve with chutney and sambar.
