- 11 kg chicken, cut into pieces
- 23 cups basmati rice
- 31 cup yogurt
- 42 onions, sliced and fried
- 53 tbsp ginger-garlic paste
- 62 tsp red chili powder
- 71 tsp turmeric powder
- 82 tsp biryani masala
- 91/2 cup milk
- 10Pinch of saffron
- 114 tbsp ghee
- 12Whole spices (cardamom, cinnamon, cloves)
- 13Fresh mint leaves
- 14Fried onions for garnish
Instructions

Marinate chicken with yogurt, ginger-garlic paste, and spices for 2 hours.

Soak rice for 30 minutes. Boil with whole spices until 70% cooked.

Cook marinated chicken until tender.

Soak saffron in warm milk.

Layer rice and chicken in a heavy-bottomed pot.

Top with fried onions, mint, saffron milk, and ghee.

Cover and cook on dum (low heat) for 45 minutes.
