Bhindi Masala

  • 1500g okra (bhindi), chopped
  • 22 tbsp oil
  • 31 tsp cumin seeds
  • 42 onions, sliced
  • 52 tomatoes, chopped
  • 61 tsp ginger-garlic paste
  • 71 tsp red chili powder
  • 81/2 tsp turmeric powder
  • 91 tsp coriander powder
  • 101/2 tsp garam masala
  • 111 tsp amchur (dry mango powder)
  • 12Salt to taste
  • 13Fresh coriander
Instructions

    Wash and dry okra completely. Chop into 1-inch pieces.

    Heat oil in a pan. Add cumin seeds.

    Add okra and cook on medium heat until slightly crispy.

    Add onions and cook until golden.

    Add ginger-garlic paste and cook for 1 minute.

    Add tomatoes and all spices. Mix well.

    Cook covered for 10 minutes until okra is tender.

  8. 8

    Garnish with coriander and serve with roti.
