- 1500g okra (bhindi), chopped
- 22 tbsp oil
- 31 tsp cumin seeds
- 42 onions, sliced
- 52 tomatoes, chopped
- 61 tsp ginger-garlic paste
- 71 tsp red chili powder
- 81/2 tsp turmeric powder
- 91 tsp coriander powder
- 101/2 tsp garam masala
- 111 tsp amchur (dry mango powder)
- 12Salt to taste
- 13Fresh coriander
Instructions

Wash and dry okra completely. Chop into 1-inch pieces.

Heat oil in a pan. Add cumin seeds.

Add okra and cook on medium heat until slightly crispy.

Add onions and cook until golden.

Add ginger-garlic paste and cook for 1 minute.

Add tomatoes and all spices. Mix well.

Cook covered for 10 minutes until okra is tender.

Garnish with coriander and serve with roti.
