- 12 large eggplants
- 22 tbsp oil
- 31 tsp cumin seeds
- 42 onions, chopped
- 53 tomatoes, chopped
- 62 tbsp ginger-garlic paste
- 72 green chilies, chopped
- 81 tsp red chili powder
- 91/2 tsp turmeric powder
- 101 tsp coriander powder
- 111/2 tsp garam masala
- 12Salt to taste
- 13Fresh coriander
Instructions

Roast eggplants over open flame until skin is charred and flesh is soft.

Peel and mash the roasted eggplant. Set aside.

Heat oil in a pan. Add cumin seeds.

Add onions and cook until golden brown.

Add ginger-garlic paste and green chilies. Cook for 2 minutes.

Add tomatoes and cook until soft and mushy.

Add all spices and cook for 3 minutes.

Add mashed eggplant and mix well. Cook for 10 minutes.

Garnish with coriander and serve with roti.
