- 12 cups whole wheat flour
- 23 medium potatoes, boiled and mashed
- 31 green chili, minced
- 41 tsp ginger, minced
- 51 tsp cumin seeds
- 61/2 tsp turmeric powder
- 71 tsp coriander powder
- 8Salt to taste
- 92 tbsp oil or ghee
- 10Water as needed
Instructions

Mix flour with a pinch of salt and water to make a soft dough. Rest for 20 minutes.

For filling: Mix mashed potatoes with green chili, ginger, cumin, turmeric, coriander powder, and salt.

Divide dough into 8 balls. Roll each into a small circle.

Place 2 tbsp filling in center, bring edges together and seal. Roll gently into a paratha.

Heat tawa/griddle. Cook paratha with oil until golden brown on both sides.

Serve hot with yogurt, pickle, or butter.
